None of this is complicated — it just helps to know it on day one instead of week six.

Learn the sneaky ones

Watch for gelatine, whey, casein, honey and E120 (carmine) on labels — and ask if bread or fries were fried in lard (manteca) or share a fryer with fish, a common one in Andalusian kitchens.

Mercadona's "Hacendado Vegano" range and Carrefour's plant-based lines cover most staples — plus every organic market above for fresh produce.
